Recipe: Sweet Potato Casserole
3 cups mashed sweet potatoes
1 cup sugar
2 eggs
1/2 cup orange juice
1/2 cup margarine
1 teaspoon vanilla
Mix potatoes & pour into 9 x 13″ casserole dish.
Topping:
1 cup brown sugar
1 cup chopped nuts
1/2 cup margarine (melt)
1/2 cup flour
Mix topping ingredients together with fork and sprinkle on top of potatoes. Bake at 350 degrees for 25-30 minutes.
