Recipe: Spicy Spaghetti with Spinach
1 box pasta (preferably penne)
3/4 cup nice olive oil
Kosher salt and fresh pepper in a grinder (if possible)
Half tablespoon red pepper flakes (to taste)
1 bunch fresh spinach leaves, washed, de-stemmed and loosely chopped
1 little jar or a half cup sundried tomatoes (preferably the ones in oil, rather than dry ones) chopped
Quarter cup fresh parmesan cheese, grated
Boil pasta water in a nice big pot (adding a bit of olive oil and a bit of kosher salt). Add pasta to water, stir and let cook.
Chop and sautee 8 cloves of garlic in a half cup of nice olive oil. When the garlic begins to brown, add a half tablespoon red pepper flakes (or less if you aren't a fan of the spice), kosher salt and fresh ground pepper to taste. Sautee for about 5 or 10 minutes on medium-low heat, adding sundried tomatoes after a few minutes, until flavors are mingled and garlic is cooked.
Drain pasta when cooked over a bowl, reserving pasta water. Submerge spinach in pasta water for 10 seconds-ish, letting it just wilt. Drain the spinach and add to your delicious garlic, tomato and oil concoction.
Stir in Pasta. Sprinkle with Parmesan.
Voila!!
Yum.
Serves two very hungry people or four people who have eaten lunch.
