Recipe: Pumpkin Muffins

1 spice cake mix
3 eggs
1/3 cup vegetable oil
3/4 cup water
1 can canned pumpkin
1 tbsp pumpkin pie spice
1 cup miniature chocolate chips (optional)

MIX all ingredients (except chocolate chips) with an electric mixer on medium speed for 2 minutes
FOLD in chocolate chips, if desired
SPOON 2 tablespoons of batter into each cupcake paper set in a muffin tin
BAKE at 350 for 20 minutes or until done (muffins will be moist but inserted toothpick will come out clean and muffin top will bounce back when touched if done).
