Recipe: Rockin' Holiday Leftovers

This recipe is easy, tastes great, is super quick, and you probably have all the ingredients in your kitchen from the day before.
Ingredients:
2 cups Leftover Stuffing
1 cup Leftover Turkey, Rough Chopped in large pieces
1/2 cup Sharp Cheddar, Grated
(null) to taste Cajun Seasoning
1 pat Butter
Directions:
Here is what you do. Take the stuffing out of the fridge and put it in a mixing bowl. Roughly chop up some leftover turkey (about a
cup) and add it to the bowl with the stuffing. Sprinkle some cajun seasoning in the bowl to taste and mix it all together gently. You don't want to mix it too much cause you will break down the stuffing even more. Be careful, you can always add more seasoning, but you don't want to over salt the dish. I make my own cajun seasoning, but any of the prepared ones will work just fine. Heat a pan over medium heat, melt a pat of butter in the pan, and then add the stuffing mixture.
Heat it all through and stir occasionally. If you don't it will stick.
I like to get some nicely browned pieces of stuffing in there, but it is up to you. Once it is hot, transfer to a bowl, sprinkle with the grated cheese, and go hang out on the couch with a cold beer, you earned it.

P.S. If you not as worn out from the day before as I am you can always take this recipe to the next level by chopping up some bell peppers, a jalapeno, and some onion. Saute them first and then add the stuffing mixture. It makes for one hell of a breakfast. Have fun with it and make it your own. Beer is optional.....
